    KALE PUGLIESE

    2 bunches kale, rough cut

    1 T. olive oil

    2 garlic cloves, sliced

    1 t. crushed red pepper

    1/4 cup water

    Blance the kale in a large pot of boiling, salted water for 2 minutes.  (Or to save energy, put the kale, still wet from washing, in a zipper plastic bag. Microwave on 80% power for 1 minute.) Drain.  Heat olive oil in a skillet.  Saute garlic and red pepper for 2 minutes.  Add greens and water.  Saute 2 more minutes.  Serves 4.

    4 T. olive oil

    6 T. flour

    3 cloves garlic, chopped

    My basil is going crazy this year so I made this recipe last night.  I used Parmesano Reggiano, which clearly comes from Italy.  Is there such a thing as domestic substitute for Parmesan cheese and is it as good as the real thing?  

    LEMON BASIL GREEN SPAGHETTI

    2/3 cup extra virgin olive oil

    2/3 cup freshly grated Parmesano Reggiano cheese 

    1/2 cup fresh lemon juice

    1/2 t. freshly ground black pepper

    Salt to taste

    I once had a Welsh Corgi named Harley (she was a "low rider" - get it?).  Harley was sweet and wonderful, but had an autoimmune disease.  So I made her homemade dog biscuits from time to time.  I think I'll make some this weekend for my new pooch, Rocco, and see if he likes them, too.

    Keep your refrigerator full.  Food retains the cold and the fridge doesn't have to work so hard to cool as it does when it's empty.  Just don't overstuff it. That causes cooling issues, too.

    I've been reading up on how to be greener in the kitchen.  I'm relatively certain I'm not going to become vegan tomorrow, but I am going to try to start with small changes.  

    Today's recipe is one I made last night.  Local gulf shrimp (one great thing about living in Houston).  I wondered about the hearts of palm because my store only had imported ones - maybe there is a domestic source. I thought about replacing them with water chestnuts but I'm not sure if they are imported or domestic either.  Anyone know how to handle this?
