Best Cookware EVER!
I grew up in a family that uses mostly cast iron, I use cast iron for most of the things I cook. Something about cooking in cast iron tastes "right". I can cook the same thing in different cookware and it doesn't taste nearly as good! I would be completely miserable trying to cook without it!
I grew up using a heavy cast
I grew up using a heavy cast iron skillet to cook virtually everything and have not been able to find one like it since. Oh, how I miss that thing.
Except Scrambled Eggs
Overeasy, sunny side up, no problem. Scrambled eggs? Get the brush.
They seem to stick to everything.
And to the person who set their oven on fire, the author CLEARLY wrote "Don’t glob it on, but every nook and cranny should have a nice, medium layer of shortening. Use about as much as you would use to coat a cake pan for baking."
SMH
But, you should season the entire pan, inside and out.
Scrambled
Scrambled eggs are fine but you need a well seasoned, well used, pan.
oven cought fire
I lathered up my cast iron skilet with crisco like you said, and put in the hot oven. It started melting off the handle and bottom and drippin' on the burners and cought fire. I nearly lost my house to fire. (also don't use water to put a crisco fire out...it don't work)
In your dreams, maybe. Try
In your dreams, maybe. Try and stop being so negative.
Use a pan to catch the drippings
Something that seems to help in our house to avoid things like that is to have something underneath the pan to catch any excess drippings that may come off. Use the two rack system and just put a regular sheet pan on the bottom one and that should work wonders to catch any excess grease.
Oh, and you're supposed to use flour to put out kitchen fires involving grease. It suffocates the flames without spreading it like water does.
don't be dumb
I understand that the author didn't expressly state that the seasoning should to be applied inside the pan only, but come on. Common sense dictates that hot grease drips, grease catches fire, and grease (even when flaming) floats on water.
It was nobody's fault but your own that you nearly lost your house in a fire. Don't believe everything that you read. Always check at least two sources for how-to information. Don't be dumb.
Cast Iron Pans
There was a time when I was always boarder line anemia. I had no anemic problems after I started using cast iron skillets. It must be true that enough iron is leached into the food to help/prevent anemia. I love my iron skillet for cooking eggs, pancakes, grilled sandwiches. The big skillet, Texas size, is wonderful for roast beef and everything else.
Cast Iron
I do remember hearing about cast iron from my grandparents however We have always used non stick at our house as i thought there was no alternative, from the looks of this article i think that i am going to change that now.
Thank you for sharing the benefits of cast iron with us, it has atleast helped one person :)

A Trip to the Gym
Good exercise moving those things around, too. I am a big Dutch oven fan. Wonderful for one pot meals cooked in the fireplace.
Cooking with cast iron
I wrote a piece in the GREEN (LIVING) REVIEW in June 2009 on this matterat this link http://greenreview.blogspot.com/2009/06/cooking-with-cast-iron.html.
I am a great cast iron fan, skillets and others, and would not wish to ever be parted from my Wagner gear and the other cast iron pans that I have got.
Let's hear it for cast iron, the healthy and green way to cook.
