I'm not a fully compliant veggie eater but if there is one animal on the plant that should be extinct - it is cows.  Cows are one of the largest environmental catastrophe's we humans are directly responsible for.  Just a few of the nasty and very real problems with Cows:
  • Degrade land and biodiversity - 26% of Ice Free Land for these beasts 
  • Boosting Greenhouse gases - estimated 18% - more than transportation! 
  • Polluting water (from CAFO's) and food (Salmonella)
  • Very large user of fresh water just to get them a few bites to eat
  • Human health - poor source of fat free protein - heart disease, cancer, diabetes 
  • Deforestation - think rain forest destruction 
http://en.wikipedia.org/wiki/Livestock's_Long_Shadowhttp://www.epa.gov /Region7/water/cafo/index.htm   So it is very simple - if you want to make a 18% impact overnight along with other social and personal benefits - stop eating Cows At least switch to Buffalo and/or Ostrich (Whole Foods) which is much lower in fat, uses less water (specifically Ostrich), and taste so much better.   I'm sure many of our veggie friends could build an even stronger debate for elimination of all meat - no debate.
