Types of vegetarians/what is it?
When most people think of vegetarians, they think of lacto-ovo-vegetarians: People who do not eat beef, pork, poultry, fish, shellfish or animal flesh of any kind, but do eat eggs and dairy products are lacto-ovo vegetarians ("lacto" comes from the Latin for milk, and "ovo" for egg). Vegetarians eat mainly fruit, vegetables, legumes, grains, seeds, and nuts. Many vegetarians eat eggs and/or dairy products but avoid hidden animal products such as beef and chicken stocks, lard, and gelatin. Vegans or strict vegetarians exclude all animal products (e.g. meat, poultry, fish, eggs, milk, cheese, and other dairy products). Many vegans also do not eat honey. Lactovegetarians exclude meat, poultry, fish, and eggs but include dairy products. Lacto-ovovegetarians exclude meat, poultry, and fish but include dairy products and eggs. Most vegetarians in the US are lacto-ovovegetarians. Ovo-vegetarian refers to people who do not eat meat or dairy products but do eat eggs. Some people are ovo-vegetarians because they are lactose-intolerant.
