I suggest that you let people know in their invitation that this is what you are trying to do and include some ideas toward that...

-no paper wrappings...
-organic/green type gifts
-good local food

Perhaps, given the time of year,
table decorations/centerpieces - plants...seeds...bulbs...
- plant seed beds of grass for centerpieces to sit on...guests can take them home to plant in their yards...

Suggest people wrap presents in diapers/blankets/bibs...etc...not paper...I'm sure you'll see some creative packaging!
