Organic Fertilizers

Does anyone have any suggestions/comments/recommendations for organic fertilizers?

Horese manure

My mother has a horse, but I was told that if you use horse manure, you run the risk of getting the seeds from what the horse eats in the manure, and it will grow weeds.

Todays landfills are tommorrows archaeological digs! 
You really don't want to use fresh horse feces period. You will burn your vegitation to a crisp. You should mix horse dung with soil and other organics. And let it naturally break down in a compost heap a bit before using in a garden.
