Canning Tomatoes and Local FoodsOne of my favorite green activities is canning local foods. Here in the south we can allot of different foods. Canning is coming back in style due to high-fuel prices and people realizing the insanity of shipping foods from other continents and how it is hurting our planet. I just added a blog post about it here: http://www2.harvesteating.com/blog-post.cfm?post=114&f=fp I also offer the following link to the Ball Company for supplies, advice and inspiration to start canning this summer: http://www.freshpreserving.com/ Canning local vegetables makes so much sense. Foods in season are abundant, readily available near you ,and much fresher and less expensive than store bought foods that have consumed tons of carbon in shipping and handling. Why reward big companies for shipping stuff around the globe by purchasing it at stores near you. Buy local! For me it's a much more pleasurable vegetables from local farmers. At my local tail-gate market there is a young kid, maybe 14 who grows all kinds of nice stuff at his 3 acre garden a few miles away. He then shows up early on Sat. morning to sell it off the back of his dad's pick-up truck. I always visit him first.
so, the moral of the story..buy local and give canning a try. Keith Snow Seasonal Cooking, Made Easy!
